Option A
Day 1:
Start walk in Ardfinnan at 9.30am to Lismore with talk at “Lady’s Abbey” and visit to Heritage Centre, Lismore.
Return by bus to Kilmaneen Farmhouse for dinner, B and B

Day 2:                        
Bus transfer from Kilmaneen Farmhouse to Lismore. Visit the “Farmer’s Market” in Lismore. 
Visit to Cathedral before departing on walk to Aglish. 
Return by bus to Kilmaneen Farmhouse for dinner, B and B.

Day 3:                        
Bus transfer from Kilmaneen Farmhouse to Aglish. Walk to Ardmore. 
Bus transfer from Ardmore at 6:00pm back to Kilmaneen Farmhouse to pick up cars.


 Cost: €145 pp/sh (to include 3 days' guided walks, 2 B and B, 2 dinners, bus transfers and free parking.

Option B
Friday 16th               
Overnight stay at Kilmaneen Farmhouse B and B

Day 1:                        
Bus transfer to Ardfinnan where walk begins at 9.30am to Lismore with talk at “Lady’s Abbey”
and visit to Heritage Centre, Lismore.
Return by bus to Kilmaneen Farmhouse for dinner, B and B.

Day 2:                       
Bus transfer from Kilmaneen Farmhouse to Lismore.

Return by bus to Kilmaneen Farmhouse for dinner, B and B.

Day 3:

I am getting loads of requests for the recipe for Courgette Bread (also know as Zucchini Bread).  This recipe uses up all those courgettes that have escaped early picking and have turned into monsters!  Although it is called a 'bread' it contains sugar and can also be used as a cake.  If you want it more bread-like then just cut down or omit the sugar.
This is a recipe from a man who lived near Lake Mitchigan who stayed with us while he and his wife were on their honeymoon about 15 years ago.  I have been making this bread every summer since then.



Courgette Bread.

Preheat over to 160 C
3 cups plain flour
2 cups brown sugar
1/4 teaspoon baking powder
1 teaspoon bread soda
1 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon cinnamon
1 teaspoon salt
1 cup chopped walnuts

Combine all these dry ingredients

3 eggs
1 teasspoon vanilla essence
1 cup sunflower oil
2 cups finely grated courgette

Combine the wet ingredients

Mix the wet with the dry ingredients and stir to combine.

Grease 2 x 1 kg loaf tins
Divide mixture between the tins
Bake for 1 hour
Cool in tins for 10 minutes
Turn out onto cooling rack

Introduction to Beekeeping 
1-day introductory course in beekeeping.
This course is designed to give those who are considering keeping bees some information and demonstrations on the process of beekeeping. 
Date - 9th  June 2012
Time - 10am - 4pm 

Tutor - Irene Power.  Experienced beekeeper
Venue - Kilmaneen Farmhouse, Newcastle, Clonmel. Co. Tipperary
Course fee - 75 euro per person which includes light lunch and refreshments 


What to Bring
Full bee-suits and gloves are provided, but you will need to bring your own wellingtons and wear a long-sleeved top.
Caution!  Please do not attend this course if you are, or think you may be, allergic to bee stings.
Beginners should first of all find out if he/she is in any way allergic to bee stings and if so, not to attempt acquiring bees or taking up beekeeping without seeking medical advice.

Weather warning.

On the day it may be considered necessary to cancel opening the hives as this part of the course is subject to good weather conditions.

 Places on this course are limited to 12 participants.

What’s a farm without a dog? With Kilmaneen, the great thing is that Fido gets to come too.
Kevin and Bernadette O’Donnell’s award-winning four-star BB farmhouse in Tipperary lets you book your dog in to one of its kennels for the duration of your stay. Book its self-catering cottage and he can stay indoors with you.
The farm has been in the family for six generations and sits in a Special Area of Conservation, aka a quiet, unspoilt, rural setting. What’s more, they use environmentally friendly farming practices, so it’s likely to stay that way.
As well as wandering the land and gardens, there’s private fishing on the farm’s stretch of the rivers Suir and Tar plus hill-walking in the Knockmealdown, Comeragh and Galtee Mountains. The Rock of Cashel, fresh from its brush with the world’s press, is nearby too.
Having worked up an appetite on those, it’s nice to know you can request a home-cooked meal on your return – with home grown fruit and veg and Aberdeen Angus beef from the field next door.
Cost: B&B prices start at €35 per person. Seven nights self-catering in the three-bedroom farmhouse, which sleeps six, costs €549 in high season.

Elderflower Cordial

The elder tree which is full of flowers at the moment.  



This is a full flower which is made up of lots of cute small flowers


This recipe was given to me by 2 lovely Austrian girls who helped me in the B/B one summer.
I have added my own tips and tricks too.

60 elderflowers
6 lemons cut into slices
60g citric acid (usually available in chemists or in health food shops)
6 lt water
6 kg sugar

Rinse the elderflowers with cold water and then place in a large glass or plastic container.  A bucket with a lid would be good.
Add the 6lt cold water.
Add the 60g citric acid.
Add lemon slices
Stir well to dissolve the citric acid.
Put the lid on the container and leave to stand for 2 days.

Strain the liquid.into another container with a lid.
Add the 6 kg sugar to the liquid and stir thoroughly.
Put on the lid and leave to stand for another 2 days but this time stir 3 or 4 times to dissolve the sugar completely.

Pour into clean bottles with screw tops.

Dilute to taste.

Serving suggestions.
Can be diluted with tap water but it is delicious with soda water or sparkling water.

Tips.
Don’t throw away all those delicious flavoured lemon slices.  Freeze them and you can add them to your cordial when serving.
I like to put the cordial into clean, plastic 1lt or 2lt milk cartons and put them into the freezer.
