I am getting loads of requests for the recipe for Courgette Bread (also know as Zucchini Bread).  This recipe uses up all those courgettes that have escaped early picking and have turned into monsters!  Although it is called a 'bread' it contains sugar and can also be used as a cake.  If you want it more bread-like then just cut down or omit the sugar.
This is a recipe from a man who lived near Lake Mitchigan who stayed with us while he and his wife were on their honeymoon about 15 years ago.  I have been making this bread every summer since then.



Courgette Bread.

Preheat over to 160 C
3 cups plain flour
2 cups brown sugar
1/4 teaspoon baking powder
1 teaspoon bread soda
1 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon cinnamon
1 teaspoon salt
1 cup chopped walnuts

Combine all these dry ingredients

3 eggs
1 teasspoon vanilla essence
1 cup sunflower oil
2 cups finely grated courgette

Combine the wet ingredients

Mix the wet with the dry ingredients and stir to combine.

Grease 2 x 1 kg loaf tins
Divide mixture between the tins
Bake for 1 hour
Cool in tins for 10 minutes
Turn out onto cooling rack
