Elderflower Cordial

The elder tree which is full of flowers at the moment.  



This is a full flower which is made up of lots of cute small flowers


This recipe was given to me by 2 lovely Austrian girls who helped me in the B/B one summer.
I have added my own tips and tricks too.

60 elderflowers
6 lemons cut into slices
60g citric acid (usually available in chemists or in health food shops)
6 lt water
6 kg sugar

Rinse the elderflowers with cold water and then place in a large glass or plastic container.  A bucket with a lid would be good.
Add the 6lt cold water.
Add the 60g citric acid.
Add lemon slices
Stir well to dissolve the citric acid.
Put the lid on the container and leave to stand for 2 days.

Strain the liquid.into another container with a lid.
Add the 6 kg sugar to the liquid and stir thoroughly.
Put on the lid and leave to stand for another 2 days but this time stir 3 or 4 times to dissolve the sugar completely.

Pour into clean bottles with screw tops.

Dilute to taste.

Serving suggestions.
Can be diluted with tap water but it is delicious with soda water or sparkling water.

Tips.
Don’t throw away all those delicious flavoured lemon slices.  Freeze them and you can add them to your cordial when serving.
I like to put the cordial into clean, plastic 1lt or 2lt milk cartons and put them into the freezer.
