I am getting loads of requests for the recipe for Courgette Bread (also know as Zucchini Bread). This recipe uses up all those courgettes that have escaped early picking and have turned into monsters! Although it is called a 'bread' it contains sugar and can also be used as a cake. If you want it more bread-like then just cut down or omit the sugar.
This is a recipe from a man who lived near Lake Mitchigan who stayed with us while he and his wife were on their honeymoon about 15 years ago. I have been making this bread every summer since then.

Courgette Bread.

Preheat over to 160 C
3 cups plain flour
2 cups brown sugar
1/4 teaspoon baking powder
1 teaspoon bread soda
1 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon cinnamon
1 teaspoon salt
1 cup chopped walnuts

Combine all these dry ingredients

3 eggs
1 teasspoon vanilla essence
1 cup sunflower oil
2 cups finely grated courgette

Combine the wet ingredients

Mix the wet with the dry ingredients and stir to combine.

Grease 2 x 1 kg loaf tins
Divide mixture between the tins
Bake for 1 hour
Cool in tins for 10 minutes
Turn out onto cooling rack

A Taste of Beekeeping

1-day introductory course in beekeeping.

The farm has been in the family for six generations and sits in a Special Area of Conservation, aka a quiet, unspoilt, rural setting. What’s more, they use environmentally friendly farming practices, so it’s likely to stay that way.
As well as wandering the land and gardens, there’s private fishing on the farm’s stretch of the rivers Suir and Tar plus hill-walking in the Knockmealdown, Comeragh and Galtee Mountains. The Rock of Cashel, fresh from its brush with the world’s press, is nearby too.
Having worked up an appetite on those, it’s nice to know you can request a home-cooked meal on your return – with home grown fruit and veg and Aberdeen Angus beef from the field next door.

Elderflower Cordial


The elder tree which is full of flowers at the moment.

This is a full flower which is made up of lots of cute small flowers

This recipe was given to me by 2 lovely Austrian girls who helped me in the B/B one summer.

I have added my own tips and tricks too.

60 elderflowers

6 lemons cut into slices

60g citric acid (usually available in chemists or in health food shops)

6 lt water

6 kg sugar

Rinse the elderflowers with cold water and then place in a large glass or plastic container. A bucket with a lid would be good.

Add the 6lt cold water.

Add the 60g citric acid.

Add lemon slices

Stir well to dissolve the citric acid.

Put the lid on the container and leave to stand for 2 days.

Strain the liquid.into another container with a lid.

Add the 6 kg sugar to the liquid and stir thoroughly.

Put on the lid and leave to stand for another 2 days but this time stir 3 or 4 times to dissolve the sugar completely.

Pour into clean bottles with screw tops.

Dilute to taste.

Serving suggestions.

Can be diluted with tap water but it is delicious with soda water or sparkling water.

Tips.

Don’t throw away all those delicious flavoured lemon slices. Freeze them and you can add them to your cordial when serving.

I like to put the cordial into clean, plastic 1lt or 2lt milk cartons and put them into the freezer.

The Pear Panel sculpture project made from homemade paper

Papercraft.

I have been studying art for the past 2 years and had the time of my life!

This pear panel was part of a sculpture project inspired by our home-grown delicious and juicy pears. The paper is my own hand-made paper and the pear panel was assembled using a 3-D decoupage technique.

I teach this technique in my Cardmaking and Papercraft classes. The next class will be taking place on Saturday, 7th May 2011.

Rhubarb is growing in abundance.
This photo is our old, established rhubarb bed, We have divided these plants many times to give us other crops and also to share with friends & family. Rhubarb after first planting must be left for 2 years without picking however tempting it may be to have strong, healthy sticks of rhubarb and a longing for rhubarb tart!

Apple trees in full bloom.
Our row of apple trees is in full bloom so looking forward to a good crop in the autumn.
We have 3 eating and 3 cooking apple trees here and my favourite is the one at the end. It gives us huge green cooking apples from mid August onwards. These apples have a delicious bitter sweet flavour that is really unique.

South Tipp farm to host national sheepdog trials
The Irish National Sheepdog Trials will be held at the farm of Jim English, Rehill, Ballylooby, from Thursday, 30th July to Saturday, 1st August 2009. This is the premier event in the Irish Sheepdog calendar for 2009 and will see the top 150 sheepdogs and handlers from all over Ireland and The Isle of Man compete for the coveted 15 places on the Irish team to represent Ireland in the International Sheepdog Trials in September.
Approximately 50 Singles competitors will run each day. There will be a Brace (doubles) competition on Thursday, Friday, and Saturday with three pairs of dogs and handlers competing daily for two places on the Irish team to join the 15 Singles winners on the team going to the Internationa event which will be held in Lowther, Cumbria.

At the press launch for the Irish event, Jim English welcomed everyone to his farm and said he was delighted that his farm was chosen to host such a prestigious event. He said that not only was it a privilege for him, but a great honour for the area to host such an event.

Jim himself is no stranger to sheepdog trialing, having competed very successfully over a long number of years. He said he was looking forward to seeing all the best dogs in the country working on his farm.

The sheep for the trials will be supplied by Brian Casey, another well known sheepdog enthusiast. Mr. Casey is no stranger to organising and competing in trials and the organisers are looking forward to having very good sheep and very good Trials.

Comment on the Knockmealdown Crossing 2008

It would be to a gentle drizzle that I would arrive to Newcastle on the banks of the river Suir for the first annual Knockmealdowns Challenge and yet straight away there was a warm welcome from the organisers – Peaks Mountaineering Club.

Not ten minutes into the proceedings of the challenge and a battering rain shower would lash in from the south. No real grief here I hear you say only that I was insistent on staying in my shorts. “Build it and they will come” would be my theme for the day which loosely translated means “Wear the shorts and the sun would quite simply have to shine!”

Over the course of the day the sun would try its best but for the most part overcast conditions would predominate. This would not deter a handful of “Mad Hatters” though, who being gluttons for punishment would take-in the odd extra summit or two as they saw fit over the route. As such this all too emphatically proved just how welcome this new walk is to the Challenge Walks Calendar.

It only took a little clearance to allow incredible and panoramic views to open up to the delight of all and thus showing just how beautiful the meandering ridge of the Knockmealdown Mountains truly is.

Peaks Mountaineering Club can no doubt be very proud of an excellent job well done. With over seventy walkers on the challenge walk, over forty on the ”B” walk and a good representation on the “C” walk, I can see no reason as to why the challenge will not continue to be the great success it was in its inaugural year.

With a wonderful stew and friendly chat at the finish, all agreed that a return visit to the Knockmealdowns can not come soon enough.

I know I’ll be wearing my shorts next year as well!

On the 25th April the Peaks Mountaineering Club based in Clonmel is organising a one-day event that crosses the high peaks of the Knockmealdown mountains.

The Swiss Cottage

The Swiss Cottage is one of the heritage gems of South Tipperary. A fairytale rustic cottage of great charm, overlooking the Suir River. The Old Lime Tree

In July '06 one of the big, old lime trees that was in the front garden fell at about six o'clock on a Saturday evening. It fell across the driveway and blocked access to the house. Fortunately, no one was hurt and all guests were out at the time but they had to use the back driveway for a few days until we were able to cut it up and take it away. This photo shows the sad remains of the trunk of the tree. Now it is all cleared away and grass grows in place of this beautiful, majestic tree. Well, we'll just have to plant five little trees to compensate! Not in this location but somewhere on the farm or in the garden.
